Soft Gingerbread
2 ½ cups flour ½ teaspoon salt 1 teaspoon ground ginger 1 teaspoon cinnamon 2 teaspoons baking soda 1 cup boiling water ½ cup sugar 1 cup molasses ½ cup butter, softened 2 eggs, beaten
Sift the flour, salt and spices together. Dissolve the baking soda in the boiling water; stir in the sugar, molasses and butter. Add the flour mixture and mix until smooth. Beat in the eggs well. Pour in a greased 9-inch square pan and bake at 350 degrees for 45 minutes. Cool in the pan for 10 minutes and then turn out onto a wire rack to finish cooling. Or, alternately, leave in the pan for serving. Top with whipped cream, if desired. This recipe makes 9 servings.
