Poor Mans Fruit Cake
Tips for making fruit cake
½ cup shortening 1 cup sugar 1 cup applesauce, unsweetened 1 cup raisins, cut in half 2 cups flour ½ cup nut meats ½ cup citron 1 egg 1 teaspoon cinnamon 1 teaspoon nutmeg ½ teaspoon cloves ½ teaspoon baking soda in a tablespoon of water ½ teaspoon salt
Preheat the oven to 300. Grease a loaf pan, line with waxed paper and grease the paper. Cream the sugar and shortening together, and then add the egg. Sift the spices and salt into the flour. Use a portion of extra flour to dredge the fruits and nuts. Mix all together well; add the baking soda last. Put into the prepared pan and bake for 45 to 60 minutes. The nuts and citron may be left out if desired to make it less expensive. If much fruit is used, bake at a lower temperature.
