Pineapple Coffee Cake Recipe
Batter:
2 cups sifted all-purpose flour 3 teaspoons baking powder ½ teaspoon salt ½ cup sugar 1/3 cup shortening 1 large egg, beaten 1 cup milk
Topping:
4 slices Pineapple ½ cup all-purpose flour 1/3 cup brown sugar ¼ teaspoon cinnamon ¼ cup melted and cooled butter
Preheat the oven to 375 degrees. Grease an 8-inch by 8-inch square pan. Sift the flour, baking powder, salt and sugar together. Cut the shortening into the dry ingredients until the mixture is dry and crumbly. Blend together the egg and milk and add to the dry ingredients; mix just until blended. Pour batter into the prepared pan. Arrange the pineapple slices on top of the batter. Mix the remaining topping ingredients together and sprinkle on top of the pineapple. Bake for 45 minutes, or until cake tester comes out clean.
