Peanut Butter Coffee Cake Recipe
2 tablespoons butter 1/3 cup sugar 1 large egg 1 ¼ cups all-purpose flour 1 teaspoon baking powder Pinch of salt 1/3 cup milk 1 teaspoon vanilla Peanut butter
Preheat the oven to 350 degrees. Grease an 8-inch by 8-inch square pan. Mix all ingredients except peanut butter well. Pour the batter into the prepared pan and spread the peanut butter on top of the batter. Bake about 25 minutes or until cake tester comes out clean. Tip: To make it easier to spread the peanut butter on top of the batter, soften the peanut butter slightly in the microwave oven. Don’t let it get too soft or runny, because then it will soak into the batter too much.
