Mothers Favorite Fruit Cake
2 cups sugar 1 cup shortening 1 teaspoon baking soda 1 cup honey 1 cup strong brewed coffee 4 large eggs, lightly beaten 5 cups flour 2 teaspoons baking powder 2 teaspoons cinnamon 1 teaspoon ground cloves 1 pound of raisins (plump them in boiling water) 1 pound currants (plump in boiling water) ¼ pound citron ¼ pound lemon peel 1 cup nuts
Cream shortening and sugar. Add the baking soda to the honey and then add this mixture to the creamed mixture. Add the coffee and eggs. Combine the remaining ingredients and add to the mixture. Bake at 300 degrees for about 2 hours in a large tube pan that has been lined with greased wax paper.
