High Altitude Baking

High Altitude baking adjustments are for you if you live 3,000 feet or more above sea level. Baking can be unpredictable at best when you're at high altitudes. Many cakes will fall or have unknown results. This is a general guide to help make adjustments in the proportions of ingredients. Each cake recipe is different, so you may have to do some experimenting a few times with baking to determine the best proportions for your particular recipe.

3,000 Feet

  • Liquid: add to each cup-1 to 2 tablespoons
  • Baking powder: decrease each teaspoon by-1/8 teaspoon
  • Sugar: decrease each cup by-No change

5,000 Feet

  • Liquid: add to each cup-2 to 3 tablespoons
  • Baking powder: decrease each teaspoon by 1/8 to ¼ teaspoon
  • Sugar: decrease each cup by-usually no change

7,000 Feet

  • Liquid: add to each cup-3 to 4 tablespoons
  • Baking powder: decrease each teaspoon by- ¼ to ½ teaspoon
  • Sugar: decrease each cup by-1 to 2 tablespoons
