Creme De Menthe Cheesecake

16 ounces cream cheese, softened

½ cup sugar

½ teaspoon vanilla

2 large eggs

4 teaspoons green crème de menthe

1-9 inch chocolate flavored pie crust


Mix the cream cheese, sugar and vanilla at medium speed until well blended. Add the eggs; mix until blended. Blend in the crème de menthe. Pour into the crust.

Bake at 350 degrees for 40 minutes or until the center is almost set. Cool. Refrigerate for 3 hours or overnight. Garnish with chocolate leaves and twigs, if desired. 8 Servings.

Mint Bon Bon Cheesecake: Substitute ¼ teaspoon peppermint extract and a few drops of green food coloring for the crème de menthe. Stir ½ cup mini semisweet chocolate chips into the batter. Sprinkle with an additional ¼ cup chips before baking.
