¾ cup prepared chocolate chip cookie dough, divided (refrigerated roll cookie dough)
1- 9 inch graham cracker pie crust
Mix the cream cheese, sugar and vanilla at medium speed until well blended. Add the eggs, mix until blended. Drop ½ cup of the cookie dough by level teaspoonfuls into the batter; fold in gently.
Pour into the crust. Dot with level teaspoonfuls of remaining ¼ cup cookie dough.
Bake at 350 degrees for 40 minutes, or until the center is almost set. Cool. Refrigerate overnight. 8 servings.
Cookies and Cream Cheesecake: Omit the cookie dough. Substitute chocolate flavored pie crust for the graham cracker pie crust. Stir ½ cup chopped chocolate sandwich cookies into the batter. Sprinkle with additional ¼ cup chopped chocolate sandwich cookies before baking.
